Baked Goods, Muffins
2-1/2 cups all-purpose flour
1 tbsp baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1/4 cup vegetable oil
1/2 cup granulated sugar
2 eggs
1-1/2 cups buttermilk or low-fat yogurt
2 tbsp lemon zest
1/4 cup poppy seeds
SYRUP
1/3 cup lemon juice
1/3 cup granulated sugar
In a bowl, combine baking powder, baking soda and salt. Mix well.
In a large bowl, beat together oil, sugar, eggs, buttermilk, poppy seeds and lemon peel.
Add dry ingredients to a large bowl and stir just until combined.
Spoon batter into 12 large muffin cups. Bake in preheated 400°F oven for 20 to 25 minutes, or until a cake tester comes out clean.
Meanwhile, in a small saucepan, bring lemon juice and sugar to a boil. Cool for a few minutes.
Prick hot muffins in a few places with a skewer. Spoon syrup over top and allow to soak into muffins. Cool before removing muffins from pan.
